What to know about leather

Tanned hide does two things no synthetic reliably copies. Under the heat and pressure of wear it stretches at your pressure points and stays stretched. That is why a leather shoe fits better in month three than on day one. Its fiber structure also passes water vapor, moving sweat out instead of sealing it in. This is most of why leather feet stay drier through a long day.

Grade decides quality more than the word leather does. Full-grain keeps the hide's outer surface intact, the densest and longest-wearing layer. Top-grain sands that surface lightly for uniformity and gives up a little strength. The label genuine leather, despite its reassuring sound, usually marks the lowest usable split, cut from the weaker inner layers. Corrected-grain hides a flawed surface under an embossed coating, and loses much of the breathability with it.

Repairability is the quiet economic argument. Leather takes resoling, patching, stretching and refinishing. So a well-made pair can serve a decade at a running cost below replacing cheaper shoes every year or two. The bill arrives as care. Dry hide cracks, and cracks are permanent, so conditioner every month or two of regular wear is not optional. Salt and rain leave marks that need prompt wiping. Break-in on a stiff pair takes real weeks.

How leather is made

Nearly all shoe leather starts as cattle hide from the meat industry, a byproduct rather than the purpose of the animal. The hide is cured in salt to stop decay, then soaked, cleaned and stripped of hair. Tanning comes next. This chemical treatment bonds the protein fibers so the hide can no longer rot. Chrome tanning, using chromium salts, finishes in about a day, yields soft flexible leather in any color, and produces roughly nine tenths of the world's shoe leather. Vegetable tanning steeps hides in tree-bark tannins for weeks and gives a firmer leather that darkens and burnishes with age, prized for soles and belts. After tanning, hides are dyed, rolled and finished, then split into layers whose position in the hide determines the grade you buy.
