What to know about nonstick

Two coatings share one name. PTFE is the slippery plastic sold under several brand names, and it releases best. Ceramic nonstick is a gel made from silica, meaning sand, cured onto the pan. It starts out equally slick and fades faster, often inside one to two years. Both sit on an aluminum body, so induction works only where a magnetic steel plate is bonded into the base.

Everything about a coated pan comes back to heat, and the limit sits below where most people cook. PTFE holds up through normal use and begins breaking down near 500 F. Above roughly 570 F it gives off fumes that can make people ill and kill a pet bird in the room. An empty pan on a high burner passes 500 F in about two minutes. This is how most coatings die: repeated dry preheating rather than one accident. Oven limits usually land between 400 and 500 F.

Protecting the surface sets the rest. Use silicone, wood or nylon tools, since a metal spatula cuts a line straight through. Wash by hand with a soft sponge, because dishwasher detergent is abrasive and dulls a coating within months even when the label allows it. Skip aerosol cooking spray: its propellants leave a sticky varnish that will not scrub off.

Replacement is planned rather than accidental. Expect 3 to 5 years from a PTFE pan in a home kitchen, and once food grips or the coating flakes, cooking on it is pointless. On safety, PFOA is the processing chemical behind the old health worry. It has not been used to make nonstick cookware in the United States since 2013, so a new pan does not contain it. PTFE itself belongs to the broader PFAS family of fluorinated chemicals, and questions about their manufacture and disposal remain open.

How nonstick is made

A nonstick pan begins as a plain pan pressed from aluminum, which is cheap, light and conducts heat about thirteen times better than stainless. The inside is blasted with grit or etched so the coating has something to grip; without that roughening it peels away in sheets.

PTFE arrives as a water-based dispersion of plastic particles. It is sprayed or rolled on in two or three thin layers, a primer, a midcoat and a topcoat. The pan is then baked near 800 F. That fuses the particles into a continuous film a few thousandths of an inch thick. Better pans reinforce it with ceramic or diamond particles or a raised steel mesh, which slows wear without making the surface safe for metal tools.

Ceramic nonstick uses a chemistry called sol-gel, where a liquid mixture sets into a solid glassy film. Silica in liquid form is sprayed on and cured at a much lower heat, and no PTFE is involved, which is the selling point. That skin is brittle, so it loses its slip as tiny cracks open with each heating and cooling.

  • Skin-on fish, since a delicate fillet comes out whole instead of leaving half its skin stuck to the pan.
  • Low-fat cooking, because the surface does the job that oil or butter has to do in an uncoated pan.
  • Cooks who want to wipe a pan clean in ten seconds rather than soak it and scrub it after every breakfast.
  • A second or third pan in a kitchen that already owns something for high heat, since this one should never take the hot burner.
