Measured: Cookware is judged by how well the metal conducts heat, measured in watts per meter kelvin. Buyers also check the maker's stated oven limit in degrees Fahrenheit and whether a magnet sticks to the base for induction.

What to know about cookware

Every pan does one job

Every pot and pan in this group does one job: move heat from a burner into food at a rate you can control. That makes cookware a thermal tool rather than a container. Two pans of the same shape and size can cook nothing alike. Shape decides what fits inside and how fast steam leaves. Metal and thickness decide what happens once the heat arrives. Bakeware is the outlier here, since it sits in hot oven air instead of over a flame. It is built thin and light for exactly that reason.

Read the pan at its rim

Read a pan at its rim, where the cut edge shows you the layers. Fully clad means aluminum, sometimes copper, bonded between sheets of stainless steel through the walls as well as the floor, so the sides heat with the base and a sauce climbing them does not scorch in a ring. Disc bottom means a plate of aluminum attached under a thin stainless body, which boils water well and leaves the walls comparatively cool. Aluminum carries heat more than ten times faster than stainless steel, which is why almost nothing is made of stainless alone. Thickness supplies the other half. Around 2.5 to 3 millimeters of clad wall is where a pan stops losing its temperature the moment cold chicken lands in it. Cast iron reaches the same steadiness at 4 to 5 millimeters of a slower, heavier metal. Surfaces sit on top of all that and follow separate rules. PTFE is sprayed onto aluminum and baked, ceramic nonstick is a cured mineral gel. Enamel is powdered glass fired until it fuses to iron. The first two wear thin. The third chips.

Your cooktop narrows it first

Your cooktop narrows the field before your cooking does. Induction heats only magnetic metal, so take a refrigerator magnet shopping: a magnet that grips the base hard means the pan will work, and one that slides off means that aluminum or copper body needs a bonded steel plate to function at all. Glass and ceramic tops want a flat base and pans you lift rather than slide, since grit under cast iron scratches the surface permanently. Gas forgives the most, though flames licking up the sides of a thin pan warp it within a couple of years. Burner size counts as much as pan size, because a base more than about 2 inches wider than the heating ring browns food in a bullseye, dark in the middle and pale at the rim.

Even heat means weight

Each gain is paid for somewhere. Even heating comes from mass and layers. So the pan that browns most reliably is also the heaviest to lift and the slowest to react when you turn the burner down. Release coatings buy you eggs cooked in almost no fat and cost you the pan itself, since no coating can be repaired at home. Temperature limits are the trade people miss. Bare clad stainless and cast iron take any heat a home oven produces. Glass lids often stop near 400 degrees Fahrenheit, silicone sleeved handles sit around the same mark, and coated pans carry a rating between roughly 350 and 500 degrees printed on the base or stated in the manual. Keep coated pans at medium, never preheat one empty, and run the hood, because an empty coated pan over a high burner passes its safe range in about two minutes.

Four checks separate a good pan from a heavy looking one. Set it on a flat counter and press one edge, since a base that rocks now will pool oil at one side forever. Lift it by the handle alone and watch whether it tips, because a pan that fights you empty will fight you full. Study how the handle is attached, where rivets driven through the pan wall outlast a spot weld by decades, and feel whether the underside is a shape your palm likes or a thin ridge. Then turn the pan over and read the base stamp for the oven rating, the induction symbol and the dishwasher note, which tell you more about living with the pan than any description will. Weight for the size is the last signal, since within one material heavier means thicker and thicker means steadier.

What fails first, by material

What fails first differs by material, and that is what a pan is really worth. Clad stainless runs twenty years or more and usually dies from thermal shock warping the base or from rivets working loose, neither worth repairing. Cast iron is close to permanent, because rust comes off with a scouring pad and a fresh seasoning. Only a crack from cold water hitting hot iron ends it. Enamel chips, and a chip inside the pot exposes bare iron that rusts and stains, so the pot stops suiting tomatoes and wine long before it stops holding soup. Coated pans have no second life, which is why they belong in the budget as a running cost. Copper is the exception worth knowing, since a worn tin lining can be re-tinned by a specialist for a fraction of a new pan.   • Test induction with a refrigerator magnet before anything else. The magnet has to grip the base firmly, since a weak tack means slow uneven heating and no grip means the burner will not switch on.
  • Keep the base within about 2 inches of your burner diameter. A 12 inch pan over a 6 inch ring browns a circle in the middle and leaves the outer inch pale and greasy.
  • Measure the cabinet, not just the pan. A 12 inch skillet needs roughly 13 inches of clear shelf depth, and handles refuse to nest, so allow a second slot rather than one stack.
  • Check the oven before buying a large lidded pot. A 7 quart Dutch oven with the lid on wants about 14 inches of clear height to lift the lid out, and usually a rack dropped one position.
  • Lift the empty weight at arm's length in the store. Liquid adds roughly 2 pounds per quart, so a 6 quart pot of soup carries about 12 pounds on top of the pot itself.
  • Buy rim diameters that repeat, such as 8, 10 and 12 inches, because lids are sized to the rim and one lid covering three pans saves a shelf.

Caring for cookware

  • Let a hot pan cool on the burner before it meets water. Thermal shock is what warps a base, and a warped base rocks, pools oil at one edge and never comes back flat.
  • Heat coated pans on medium with fat already in them and never empty. An empty coated pan over a high burner climbs past its rated limit in roughly two minutes, and that heat is what destroys the surface.
  • Wash aluminum and clad pans by hand. Dishwasher detergent is alkaline enough to oxidize bare aluminum to a chalky gray, and repeated hot cycles work handle rivets loose over the years.
  • Scrub with a nylon pad or a mild abrasive powder instead of steel wool. Scratches give food something to grip, so a scoured stainless pan sticks a little more every year.
  • Slide a cloth or paper towel between stacked pans. Metal resting on a coated surface is the most common reason a good nonstick pan dies years before its heat has worn it out.
  • Wipe bare cast iron and carbon steel dry while still warm and rub on a thin film of oil. Wet iron rusts within hours, and that film bakes into the seasoning that releases your next meal.

Will my pans work on an induction cooktop?
Hold a refrigerator magnet against the base. A firm grip means the pan heats properly, a weak tack means it heats slowly, and no grip at all means nothing happens. Cast iron and magnetic stainless pass, while plain aluminum, copper and glass fail unless a steel plate is bonded underneath. Base diameter matters too, since most induction rings need roughly 4.5 inches of contact before they switch on.
How hot can a nonstick pan safely go?
Keep it at medium and inside the maker's rating. This is usually printed on the base and falls between about 350 and 500 degrees Fahrenheit. An empty coated pan on a high burner can pass that range in around two minutes. Overheated coatings give off fumes that are really dangerous to pet birds, so run the hood and reach for stainless or cast iron when you want a hard sear.
Why does food stick to my stainless steel pan?
Almost always because the pan was too cool or too dry when the food went in. Heat it over medium for two to three minutes, add fat, then add the food. Protein bonds to bare metal on contact and lets go by itself once a crust forms, so leave it alone rather than prying. The browned bits left behind dissolve into a sauce the moment liquid hits them.
How long should a pan last, and what usually fails first?
Clad stainless and cast iron are measured in decades. Their failures are a warped base or loosened rivets on the first, a crack from thermal shock on the second. Enamel lasts until something chips it. Coated pans are the short ones, since the surface degrades with heat and age no matter how carefully you cook, so budget for replacement rather than repair.
Can cookware go in the dishwasher?
Stainless survives it, though detergent dulls the finish over time. Everything else pays. Bare aluminum oxidizes to a chalky gray, coated surfaces lose life with every hot cycle, cast iron rusts within one wash, and enamel colors fade. Rivets also loosen slowly under repeated heating and cooling. Hand washing adds years to every pan you own and takes about ninety seconds each.
Is a warped pan worth keeping?
Not for cooking that depends on contact. A rocking base pools oil at one edge, browns unevenly, and on induction or a glass top it loses so much contact that heating becomes erratic. Nothing straightens it reliably at home. Demote it to boiling water and prevent the next one by skipping empty preheats, never running cold water into a hot pan, and matching pan size to burner size.
What do the numbers mean, 10 inch versus 3 quart?
Pans are sold by the diameter across the top rim, and pots by the volume they hold. A lid is sized to that rim measurement, so a 10 inch lid fits any 10 inch pan you own regardless of shape. Fill pots to about two thirds so boiling liquid has somewhere to go, which means a 6 quart pot comfortably cooks 4 quarts of soup.
