What to know about ceramic
One word covers two unrelated products, and they behave nothing alike. Enameled cast iron is a heavy iron pot wearing a fused glass coat, the material of the classic Dutch oven. Ceramic nonstick is a thin sprayed coating on a light aluminum pan. Weight tells them apart: anything you can lift with one finger is the coating.
Enameled iron keeps the heat advantages of bare iron and drops the maintenance. Glass does not rust, needs no seasoning, and shrugs off tomato, wine and lemon, making it the right pot for a long acidic braise. Induction works, since the iron underneath is magnetic. Oven limits come from the knob rather than the pot. A knob of phenolic, a hard molded plastic, caps out near 375 to 400 F, while a stainless knob takes 500 F. Swapping one for the other is a cheap fix.
Brittleness comes with the glass. Enamel chips when a pot is knocked against a sink or dropped, and the iron underneath then rusts. Sudden temperature swings crack it, so never run cold water into a hot pot. Pale interiors stain brown with use, and a paste of baking soda lifts most of that back.
Ceramic nonstick runs on nonstick rules and a shorter clock. Release is excellent for the first months, then fades as the sprayed silica layer develops tiny cracks, often within one to two years, sooner than PTFE. Keep it under medium heat, use soft tools, wash it by hand. No PTFE is involved, which is the reason people buy it. Induction depends on whether a steel plate was bonded into the aluminum base.

How ceramic is made
Porcelain enamel starts as glass. Silica and other minerals are melted, quenched into brittle flakes called frit, and ground to a powder with color pigment mixed in. A bare cast iron or steel pan is coated with that powder and fired near 1500 F, hot enough that the glass melts and bonds to the metal. Good pots take several coats, each fired separately, which is part of why two pots that look identical can price far apart.
Ceramic nonstick shares only the word. A liquid made from silica, the same mineral as sand, is sprayed onto an aluminum pan. It is cured at a few hundred degrees, where it sets into a glassy skin thousandths of an inch thick. Nothing fuses to the metal the way enamel does, which is why one wears through and the other does not.
