The basics
What to know about stainless steel
Stainless is the steel most kitchen knives are made from, and for most cooks it is the right answer. Chromium in the mix forms an invisible film that stops rust, so the blade survives the sink, the dishwasher rack and a morning spent cutting lemons without spotting. Codes like X50CrMoV15 stamped near the handle name the recipe, and the 15 there is the chromium percentage.
It is usually run softer than a carbon or Japanese blade, around 54 to 58 HRC. That costs you edge life. A stainless chef's knife needs a few strokes on a honing steel every week or two rather than every month. Honing means straightening an edge that has folded over to one side, which takes about ten seconds and removes almost no metal. In exchange the knife is almost impossible to ruin. The blade flexes instead of chipping and tolerates being twisted out of a hard squash. It comes back to sharp on a basic stone or pull-through with no skill at all.
Test the edge on paper rather than guessing. Hold a sheet by one corner and slice down: a sharp blade parts it silently, a dull one tears or skids off. Run that check monthly.
The trade is worth taking unless you already sharpen well. An edge you restore in thirty seconds beats an edge that lasts longer and then needs a specialist. Set against high-carbon steel at 60 to 64 HRC, you lose maybe half the working life between sharpenings and buy back every wet sink. Steel is rarely what gives out first. Handles loosen and the glued joint where the blade meets the grip swells, both sped up by dishwasher heat, so wash and dry by hand.

How stainless steel is made
Stainless knife steel is iron mixed with at least about 13 percent chromium, plus carbon for hardness. Small amounts of molybdenum and vanadium refine the grain and improve wear. The chromium reacts with air to form a thin oxide layer that reseals itself whenever the surface is scratched. That is what makes the blade stainless rather than rustproof.
The blank is either forged, meaning shaped under a hammer or press, or stamped, meaning cut from rolled sheet. Both are then heat treated. Heated until the structure changes, quenched to lock in hardness, then tempered at a lower heat to take the brittleness back out. That heat treatment, not the word forged or stamped, is what decides whether the blade is good.
