What to know about microwaves

A magnetron in a metal box

A microwave oven is a metal box with a magnetron bolted to one wall. That tube turns household electricity into radio waves at 2.45 gigahertz, and the box, including the mesh you see inside the door glass, traps them. The holes in that mesh are far smaller than the 12 centimeter wave, so energy cannot pass out while light passes in. Capacity is quoted in cubic feet, from about 0.5 for a dorm unit to 2.2 for a large countertop model, and speed in watts of output. Where the box goes splits the market into countertop, over-the-range, and built-in or drawer installations. That single decision carries more weight than anything printed on the control panel.

What actually gets hot

Water, fat and sugar absorb those waves, which is why a wet potato heats and a dry ceramic plate mostly does not. Absorption also means the energy runs out with depth: the first inch to inch and a half of food takes almost all of it, and the center of a thick lasagna gets hot by ordinary conduction from the outside in. Stirring halfway, covering the dish and letting food stand for a minute or two are not politeness, they are how the middle catches up. Power levels below full are usually faked with time. That is why an oven set to 50 percent runs at full blast for ten seconds and rests for ten. Inverter models lower the output continuously instead, which is what makes defrosting and chocolate melting behave. Metal reflects rather than absorbs, so a thin edge such as foil or a fork tine concentrates charge until it sparks. A solid metal rack supplied with the oven is shaped so it cannot.

Pick the installation first. A Countertop Microwave costs the least, plugs into a normal outlet and can be replaced in ten minutes. This is the right answer for renters and for anyone whose old one just died. An Over-the-Range Microwave buys back counter space by taking over the hood position, so it makes sense only where a duct can reach outside and where the cook can lift a hot dish out at about chin height. Built-In & Drawer Microwaves belong to kitchens being designed rather than repaired, and a drawer opens at hip level, the safest arrangement for a seated user or anyone who should not reach over their head with boiling liquid. Where most regret lives

The over-range position is where most regret lives. That appliance is two machines sharing one body, and the hood half is the weaker one. It sits high and shallow above the front burners, right where steam and smoke rise. It usually moves 300 to 400 cubic feet of air per minute, against 600 or more for a chimney hood. And in the many kitchens where no duct exists, it simply blows air back through a charcoal filter. That catches some smell, and none of the heat, grease vapor or moisture. Drawer models give up the window, so you cannot watch food without opening. A convection cavity bakes grease onto its own walls. Compact units hide the quietest trap of all: package instructions are written around 1,100 watts. A 700 watt oven needs roughly half again as long for everything, every time.

Two numbers, one usually missing

Two numbers decide most of it, and one is usually missing from the shelf tag. Output watts, measured by heating a liter of water and watching the temperature climb, run 900 to 1,200 on full-size models and 600 to 800 on compacts. Input watts, about 1,500 for a 1,000 watt oven, are the draw from the wall and not a performance claim. The second number is turntable diameter, because a 10.5 inch dinner plate needs roughly 12 inches of glass to turn without catching the walls. Cubic feet will never tell you that. Test evenness with a plate of marshmallows or a shallow dish of water, where cold rings and scorched patches appear within ninety seconds. Then push the door shut and pull the handle, since slop in the latch means the interlock switches are already worn.

Clean it or lose years

A microwave kept clean lasts 8 to 10 years. A dirty one fails sooner, because dried food on the walls absorbs energy meant for your dinner and turns into a hot spot. The part almost nobody knows about is the waveguide cover, the small pale panel on the inside wall hiding the opening where energy enters. That panel is mineral board, it has to stay dry and intact. Grease burning on it is the usual cause of arcing inside an older oven. Past that the rules are short: run it with something inside, keep the door square, wash the grease filter on an over-range unit, and leave the case closed, because the capacitor within holds a lethal charge long after the plug is out.

Fit & sizing

  • Leave the clearance the manual states, often 3 inches at the sides and top and 1 inch at the back, and measure depth with the plug in place, which adds 2 to 3 inches. A cubby that fits the box but not the gaps will cook the electronics.
  • Measure your biggest dinner plate and your usual casserole dish, then compare them with the turntable. A 10.5 inch plate needs about 12 inches of glass to rotate without striking a wall, and the cubic foot figure gives no warning.
  • On an over-the-range unit the top usually lands 66 inches from the floor, leaving 13 to 18 inches above the cooktop. Stand where you cook and mime lifting a full 9 by 13 dish out at that height before committing. The unit weighs 50 to 90 pounds and must be bolted to wall studs and the cabinet above by two people.
  • Trace the duct before choosing an over-range model. Standard ducting is 3.25 by 10 inch rectangular or 6 inch round, it can usually run up through the cabinet, straight back through an exterior wall, or nowhere at all, and every 90 degree elbow costs airflow. If it can run nowhere, you are buying a recirculating filter.
  • Order a built-in or drawer model from its cutout drawing and confirm the trim kit exists. Cabinetry may enclose a countertop microwave only when its own maker sells a kit for that exact model, because the kit supplies the air path the loose gaps around a free-standing unit normally provide.
  • Give it a dedicated 120 volt, 15 or 20 amp circuit and skip the extension cord. A 1,000 watt oven pulls about 1,500 watts from the wall, enough to trip a shared breaker every time the refrigerator compressor starts.

Care

Caring for microwaves

  • Wipe the cavity within a day of a splatter, or steam it loose first by boiling a cup of water with lemon in it for four minutes. Dried food absorbs the energy meant for your meal and becomes a hot spot that scorches whatever sits above it.
  • Inspect the waveguide cover, the pale mineral panel on the side wall, every time you clean. It has to be dry, flat and unbroken, since grease burning on it is the usual cause of arcing. Replace it rather than scrubbing it away, and never run the oven with it missing.
  • Wash the metal grease filters of an over-range unit in hot soapy water every month, and swap the charcoal filter every 6 to 12 months on a recirculating installation. Charcoal only holds odor, it saturates without any sign, and a clogged grease mesh throttles the airflow you paid for.
  • Keep something in the cavity whenever it runs. With no water to absorb it, the energy reflects back into the magnetron and shortens the tube's life. Even a stray thirty seconds on an empty oven is worth avoiding.
  • Treat the door as the safety system it is. Three interlock switches cut power the moment it opens, so if the door is bent, the latch feels loose or the seal is damaged, stop using the oven. Never push anything into the latch openings to test them.
  • Leave the case closed and hand faults to a technician. The high voltage capacitor inside stores a charge that can kill long after the cord is pulled. No cleaning or filter job needs the shell opened.

Common questions

How many watts do I need?
For a full-size oven, 900 to 1,200 watts of output. Reheating times printed on frozen packages assume about 1,100, so a 700 watt compact needs roughly half again as long for every job. Below 800 watts a full plate starts to feel slow. Ignore the input wattage printed on the back; that is the draw from the wall, about 1,500 watts on a 1,000 watt oven.
Why is my food scalding at the edge and cold in the middle?
Energy penetrates only about an inch to an inch and a half. Past that, the center heats by conduction from the outer layer, exactly as it would in a pan. Fix it by dropping to 60 or 70 percent power and running longer, arranging food in a ring rather than a mound, stirring halfway through, and letting the dish stand a minute or two before you eat.
Is an over-the-range microwave a real range hood?
It is a compromise. Most move 300 to 400 cubic feet per minute against 600 or more for a chimney hood. They sit high and shallow over the front burners where most steam rises. Ducted outside, that is adequate for everyday cooking. Recirculating through charcoal, it removes some odor and leaves the heat, grease vapor and moisture in your kitchen.
Does microwaving destroy nutrients or make food radioactive?
Neither. These are non-ionizing radio waves that agitate water molecules and stop the instant the door opens, leaving nothing behind in the food. Short cooking times and very little water actually preserve more vitamin C and B vitamins than boiling does. The real hazards are steam burns, superheated liquid and uneven heating that leaves cold spots inside meat.
Can metal ever go in?
Sometimes, and the shape decides. Thin edges concentrate charge and spark, so foil, twist ties and forks stay out. Thick smooth metal reflects harmlessly, which is why a rack supplied with your own oven is safe in it and a rack borrowed from another one is not. In a convection microwave, metal pans are allowed in convection-only mode and forbidden in microwave modes.
What does inverter power actually change?
Ordinary ovens fake half power by running flat out for a few seconds and resting. An inverter model lowers the output continuously instead. For reheating leftovers you stir anyway, the difference is small. For defrosting, melting chocolate or warming anything with dairy in it, the cycling version cooks the edges before the middle thaws and the inverter does not.
Is it cheaper to reheat in the microwave or the oven?
The microwave, by a wide margin. Two minutes at full power uses roughly 0.05 kilowatt hours. An electric oven draws about 2 kilowatt hours to preheat and hold 350 F for an hour, so warming one plate that way costs around forty times as much and heats the kitchen with it. The oven wins only when you want a crisp surface.
Can I build my countertop model into a cabinet?
Only if the maker sells a trim kit for that exact model, and then only with that kit fitted. The kit supplies the air path that the loose gaps around a countertop unit normally provide. Boxing one in without it traps heat against the magnetron and the control board, voids the warranty, and creates the overheating hazard the manual warns about.
